3 easy microwave recipes for a quick work-life adaptation

Living alone is pleasurable, indeed, having all of the alone time to spend on yourself, the private space for your hobbies, and the perfect space to do what you like with it. However, it also means that you have to take care of yourself and there will be no one there to help you with daily tasks like washing and cooking, even when you are sick. Scrambled eggs

Ingredients 

  • 2 eggs
  • Salt and pepper to taste

Instructions

  1. Crack whatever amount of eggs you like into a microwavable bowl, and have them mixed using a whisk or a fork.
  2. Microwave for 1 minute in high heat, take out, stir, and continue cooking for the next 30 seconds. Depending on the power of your microwave, this 30 seconds step might repeat. 
  3. It is easy to over cook the eggs, so pay close attention while they cook.  

Mac and Cheese

Ingredients 

  • 1/3 cup of macaroni of choice
  • 1/3 cup chopped cooked chicken (optional)
  • Dash of Italian, poultry or steak seasoning blend (optional)
  • 1/4 heavy cream or milk
  • 1/4 cup shredded Cheddar-Parmesan cheese blend
  • 1 slice of Cheddar cheese, torn to bits
  • Salt and pepper to taste

Instructions

  1. Have a filled microwavable mug of macaroni, chopped cooked chicken, seasoning blend and enough water to cover the macaroni at least 2 inches. 
  2. Cover the mug with paper towels and place a plate under the mug for any spillage during cooking. 
  3. High heat microwaving until the macaroni is tender, which should take about 4 to 8 minutes depending on how strong your device is. 
  4. After cooked, carefully remove the mug from the microwave and drain any excess liquid out of the mug.
  5. To the same mug, add the heavy cream or milk, Cheddar-Parmesan cheese blend, torn cheddar bits, and a pinch of salt and pepper. Place the mug back into the microwave and cook on high heat. 
  6.  Keep checking and stirring every 25 to 30 seconds, until the cheese is melted and the sauce forms. It should be up to 90 seconds. Once done, let it cool a little before serving. 

Baked potato

Ingredients 

  • 1 Large Russet Potato or any potato of choice
  • 1 Tablespoon butter
  • 3 Tablespoon of shredded cheese
  • 3 Teaspoons of sour cream
  • Salt and Pepper to taste

Instructions

  1. Scrub the potato clean and prick it well with the tines of a fork then place that potato onto a microwaveable plate.
  2. Microwave the potato on full power for 5 minutes. Once done, turn the potato over and continue to cook for another 5 minutes. This is done to ensure that the potato is evenly heated.
  3. When the potato is suitably soft, remove it from the microwave and cut it in half lengthwise. Scoop the insides of the potato out into another bowl and season with salt and pepper. Mix and mash using the fork and add in a tablespoon of butter and 2 tablespoons of cheese. Scoop the insides back into the potato and return it to the microwave to cook for another minute to melt the cheese. 
  4. Once done, top the potato off with the remaining cheese and sour cream and ENJOY!!.
